A good raw material for canning is to use chemical methods (calcium carbide or ethylene) or fumigation to ripen 9 ripe bananas to the 3rd or 4th day at around 18°C. Peel and shred: After the banana is moderately cooked, take it out and rinse it with disinfectant water. Then peel off the peel, and then use a stainless steel knife tip or bamboo clamp to remove or clamp the silk around the pulp.It must be washed carefully, otherwise the banana slices will turn brown after canning, which will affect the quality and appearance. Slicing and soaking: Use a stainless steel knife or slicer to cut the meat into 1 cm thick slices. After slicing, it should be immersed in 50% sugar solution immediately. Do not soak for 20 minutes at room temperature to prevent the pulp from oxidation and blackening. Heat treatment: The banana slices are soaked in a hollow aluminum spoon, put in a 30% concentration of boiling sugar solution, and kept at 85-95°C for 10 minutes. Canning: sugar juice: add 35 kg of water to the pot, heat and boil. Then add 15 kg of white granulated sugar and stir until the sugar is completely dissolved. Measure the sugar content with a refractometer and correct it to 30%. Add 0.5% citric acid to the sugar solution and 5mg vitamin C per pot. After filtering, keep the temperature of the sugar liquid, and then sterilize it in cans. The overall processing procedure is like this, which is quite rigorous.
