Among them, the commonly called jam can still detect the fruit mass; the product with uniform texture and semi-solid is called puree. Canning is a process and preservation method in which the fruit and the filling liquid are put into an air-tight container, and then subjected to heat sterilization. Canned food has the advantages of good quality, strong preservation, easy to eat and carry, and highly automated production. Before filling, the empty can must be sterilized to achieve a commercial aseptic state, that is, there are no microorganisms that can cause food spoilage and disease after human consumption, but a small amount of high-temperature resistant and non-toxic spore-producing bacteria and acidic food are allowed There are microorganisms that are intolerant to acid.
